Cheesy Chicken Chili Casserole

Where’s the beef? Well no one will miss the beef in this hearty, healthy low-fat chili. Cooks in only 20 minutes, but tastes like you’ve cooked it for hours. (Prep time 15 minutes) Serves 4-6 Calories 430 per serving 

Ingredients: 

4 skinless boneless chicken breasts, cubed
1 onion, chopped 
1 red pepper, seeded and sliced 
1 clove garlic, minced 
3 tablespoons olive oil 
1 can pinto beans, drained 
1 can stewed tomatoes 
2 tablespoons chili powder 
1 teaspoon cumin 
1/4 teaspoon cayenne pepper 
1/4 teaspoon dried oregano + garnish 
1 cup pepper jack cheese, shredded 
1 cup mozzarella cheese, shredded 
1 teaspoon lime juice 
Salt and pepper, to taste 

Directions:

In a large saucepan heat the oil then add in the onions, peppers and garlic cook until onions are translucent, 2 minutes.  Add in the cubed chicken pieces and cook until chicken is no longer pink, about 5-6 minutes. Add in the beans, stewed tomatoes, chili powder, cumin, cayenne pepper and oregano. Cover and simmer for 20 minutes. Stir in cheese, lime juice and salt and pepper, to taste. Cook until cheese melts. Transfer to a serving dish and sprinkle on some oregano. Easy Peasy
