Chicken Louis Salad

What makes Chicken Louis Salad..ah Chicken Louis Salad? Well, it’s the homemade mayonnaise mixed with horseradish, chili sauce and garlic combined together with peppers and green onions. Want some heat? Add 1/4 teaspoon of crushed red pepper flakes to the mayonnaise. Serves 4 Total Time: 20 minutes

Louis Mayonnaise Ingredients:

1 egg
1/2 teaspoon salt
1/4 teaspoon Dijon mustard
1 1/2 teaspoon red wine vinegar
3/4 cup olive oil
1/4 teaspoon white pepper

Directions:

Whisk together the egg, salt, mustard and red wine vinegar. Slowly drizzle in the oil while whisking, then did in the white pepper.

Salad Ingredients:

1 1/2 lbs boneless skinless chicken breasts
1/3 cup finely chopped green or red bell peppers
1/4 cup finely chopped celery
1/4 cup finely chopped green onions
3/4 homemade Louis mayonnaise
2 teaspoon capers
2 teaspoon grated horseradish
1 1/2 teaspoon lemon juice
1 clove garlic, pressed
1/4 cup chili sauce
Salt and pepper, to taste
2 - 3 cups shredded romaine lettuce

Directions:

Parboil your chicken breasts for 20 minutes until it’s no longer pink inside. Let cool then shred in a large bowl, combine with the peppers, celery and onions.

In a blender add in the homemade Louis mayonnaise, capers, horseradish, lemon juice, garlic, chili sauce, salt and pepper. Blend until well combined. Add 1/2 of this dressing to the chicken mixture. Toss the chicken mixture with the shredded lettuce and remaining dressing then transfer to a serving bowl. Easy Peasy!
