Grilled Buffalo Chicken and a Blue Cheese Dressing

Outside grilling season is about to come to end, but that doesn’t mean you can’t use your stovetop grill to make this Grilled Buffalo Chicken. I’ve added a Blue Cheese Dressing, so don’t forget the celery and carrot sticks. This would be great for game day or any day, because it only takes 45 minutes and serves 4. 

Make a meal by adding a side salad and some Homemade Twice Fried French Fries with Truffle Sea Salt  or Copycat KFC Crispy Potato Wedges

Ingredients: 

2-2 1/2 lbs cut up chicken pieces (breasts and thighs, preferred)
1/3 cup butter, melted 
2-3 tablespoons of your favorite hot sauce 
Dash or two of paprika 
Celery and Carrot sticks 

Blue Cheese Dressing:

1/2 cup plain yogurt 
1/2 cup sour cream 
1 teaspoon sugar 
2 tablespoons lemon juice 
1 clove garlic, minced 
1/2 cup crumbled blue cheese 

Blue Cheese Dressing Directions:

Combine all ingredients except blue cheese. Add cheese just before serving. Makes 1 1/2 cups.

Grilled Buffalo Chicken Directions:

Preheat outdoor grill or prepare charcoal grill. Using a stovetop grill make sure hot before cooking. With any grill You might use some nonstick spray or oil on the grates to prevent sticking. 

Pat chicken pieces dry. Combine the melted butter and your favorite hot sauce. Brush chicken on all sides with 1/2 of the mixture. Place on grill and turn every 10 minutes basting occasionally with remaining mixture. Grill a total of 30 minutes or until chicken’s internal temperature reaches 160F-165F. Brush chicken with any remaining sauce and sprinkle on some paprika. 

Serve with your blue cheese dressing and celery and carrot sticks. Easy Peasy!
