Great Side Dish with Chicken: Loaded Twice Baked Potatoes

This recipe for Loaded Twice Baked Potatoes is one of the best and easiest side dishes to have for entertaining.  Serve with a roast chicken and a dinner salad. Serves 4 Total Time: 1 hour 30 minutes 

Ingredients: 

4 russet potatoes, wash, pat dry and prick with a fork in a few places.
3 green onions, thinly sliced 
2 tablespoons butter 
1/2 cup milk or half & half, hot
Salt and pepper, to taste 
Dash each of nutmeg and paprika 
4 slices bacon, cooked and crumbled 
2 tablespoons each of grated Parmesan and grated sharp cheddar cheese 

Directions:

Preheat oven to 400F. Bake potatoes on a rack for 1 hour or until done. When cool enough to handle cut a thin slice from the top of each potato. Scoop out the inside of the potato in a bowl. Add the hot milk or half & half and beat with a hand mixer until fluffy. Mix in the butter, green onions, seasonings and crumbled bacon. 

Spoon potato mixture back into the shell, place on a baking sheet then top each with both cheeses. Reduce oven to 375F and bake for 15 minutes or until hot and cheese melts. Serve immediately. Easy Peasy!
