Ground Chicken Dorito Salad

I love this Dorito Salad and have it for dinner a couple nights a month. I’ve made it with ground chicken, ground turkey and ground beef. Serves 2-3 Total Time:  30 minutes. 

Ingredients:

1 lb ground chicken (or protein of your choice)
1 pkg of taco seasoning 
1 can (16oz) of pinto beans 
1 head of iceberg lettuce, chopped 
1 large tomato or 2 medium, chopped 
1/2 red onion, chopped (optional)
2 cups shredded cheddar cheese 
Handful of Doritos for each salad, crunched
Catalina dressing, to taste 
Salt and pepper, to taste

Directions:

In a skillet brown meat, (depending on protein used you may want to drain some of the liquid off) stir in taco seasoning; once mix in well add in the pinto beans and cook covered 5 minutes. 

On separate salad plates divide chopped lettuce, tomatoes and onions, if using. Then divide the meat mixture among plates, top with cheese, a handful of crushed Doritos and Catalina dressing, to taste. Season with salt and pepper, to taste. Easy Peasy!
