Couscous with Mint Lemon and Toasted Almonds

I never realized how easy couscous is to make, all you have to do is pour boiled liquid over the couscous cover it with plastic wrap until it absorbs the liquid and  its done.  This side would go great with baked or grilled chicken.  Add mint, lemon and toasted almonds for flavor or change it up by adding asparagus, black olives or bell peppers.  Serves 4 Total Time: 15 minutes

Ingredients:

1 cup couscous
1 cup chicken or vegetable broth
2 tablespoons olive oil or butter
1/2 cup water
Salt and pepper, to taste
1 teaspoon lemon zest
1 tablespoon fresh lemon juice
2 tablespoons fresh mint, chopped
1/4 cup toasted almonds, chopped

Directions:

Boil your broth oil or butter and water, then gently pour over the bowl with your couscous. Stir to combine. Cover the bowl with plastic wrap and set aside until the liquid has absorbed. about 10 minutes.  Fold in your mint, lemon zest, lemon juice and toasted almonds. Easy Peasy!
