Instant Pot Alfredo Penne Chicken


Just unthawed a couple chicken breasts and now wondering what to do with them? Since I need a new oven my choices are crockpot, stovetop or Instant Pot.  Yes, I could of cooked them in 15 minutes on the stovetop, but why not add them to a creamy homemade Alfredo sauce with penne pasta in my Instant Pot for an additional 16 minutes???? (10 minutes to come to pressure and only 6 minutes to cook). Serves 4

Ingredients:

12 oz package of uncooked penne pasta 
4 oz of freshly shredded real Parmesan cheese
1 tablespoon dried parsley, garnish
2 tablespoons olive oil
2 tablespoons minced garlic
4 cups chicken broth
2 cups heavy whipping creăm
Kosher salt and freshly ground black pepper, to taste
1 teaspoon thyme
2 large chicken breasts

Directions:

Set Instant Pot on sauté and add your olive oil. Pat dry your chicken breasts and season with salt, pepper and thyme. Sauté chicken until golden brown and the internal temperature reaches 165F. Remove and set aside.

Add the minced garlic and sauté 1 minute, then add the chicken broth. Stir with a wooden spoon to get all the yummy bits off the bottom, then add the cream and pasta. Place the chicken breasts on top of the pasta. Turn off sauté setting. Close lid, make sure steam vent is closed and set to high pressure for 6 minutes. When done use the quick release method. Open lid carefully. Remove the chicken and set aside to rest.

Stir the pasta with the sauce, taste test to add salt and pepper, to taste. Add in the cheese (I left a little out to garnish), but I added the parsley at this time. Cut the chicken into 1” pieces, then add the pieces back into the Instant Pot, stir to combine with pasta. Serve hot with a side dish and crusty bread. Easy Peasy!
