Grilled Spicy Beer-Can Cauliflower

Some like it hot and spicy (not me I’m a baby spice girl) ...but for those that like a little hot sauce (on everything), this grilled spicy beer-can cauliflower is a great side dish for your grilled or fried chicken. Serves 3-4 Total Time: 1 hour 25 minutes 

Ingredients:

1 head of cauliflower, base trimmed to fit beer can but florets still stay together 
1/3 stick of butter, melted, divided 
Salt, to taste 
1 can beer
Hot sauce, to taste 
1/3 teaspoon grated garlic 

Directions:

Preheat grill to medium heat. Drink (cause I know your not pouring it out) 1/3 of the beer. Brush entire head of cauliflower with melted butter and season with salt, to taste. Place a double layer of foil on the grill, put the beer can on the foil and place the cauliflower on top. Cover and cook until the cauliflower is browned and tender, about an hour. 

In your remaining melted butter add in the hot sauce, to taste and the grated garlic. Remove cauliflower and brush on the spicy butter mixture. Return to beer can and grill an extra 10-15 minutes. Baste with any spicy butter that may be remaining and season with salt, if needed. Serve with blue cheese dressing (optional). Easy Peasy!
