Instant Potato Flakes Baked Chicken

Using seasoned potato flakes gives this chicken a crusty delicious surface and also keeps the chicken juicy while baking. Serves 4 Total Time: 1 hour 10 minutes


1 3lb frying chicken, broken down into pieces or 4 chicken breasts (1 breast per person)
1 egg
1/4 cup milk or half & half
1 cup instant potato flakes
1 teaspoon paprika
1 teaspoon garlic salt
1 teaspoon poultry seasoning
1/2 cup Parmesan cheese
2 tablespoons butter, melted


Preheat oven to 400F. Trim and wash chicken; pat dry and set aside.

In a bowl beat the egg with the milk or half & half. In another bowl combine the potato flakes, garlic salt, paprika, poultry seasoning and Parmesan cheese. Dip chicken pieces in the egg mixture then roll them in the potato flake mixture until coated evenly on all sides. Transfer to a baking dish and sprinkle with the melted butter. Bake 35 minutes turning chicken once. Increase oven temperature to 425F and bake another 10-15 minutes or until the chicken’s internal temperature reaches 160F-165F. Serve immediately with your favorite sides. Easy Peasy!
