This sweet and sour chicken is easy to prepare and makes a delightful and economical meal. Pineapple chunks are a festive addition. Would you substitute the pineapple with sliced peaches? That would be different. But always serve with the traditional rice. Serves 4 Total Time: 1 hour 15 minutes
Ingredients:
1 3-3.5lbs boneless skinless chicken, cut up into bite size pieces
1 tablespoon butter, melted
1/2 teaspoon salt
Dash black pepper
Dash ground ginger
3 stalks celery, diced
1 8oz can pineapple chunks
2 tablespoons brown sugar
3 tablespoons water
1 1/2 tablespoons soy sauce
1 tablespoon apple cider vinegar
1 tablespoon cornstarch
1 red pepper, sliced
Garnish: green onion, chopped
Directions:
Preheat oven to 325F. Rinse chicken and pat dry. In a baking dish add the chicken pieces cover with melted butter, sprinkle with salt, pepper and ginger; then top with celery. Bake about 20 minutes or until lightly browned.
Drain the pineapple juice into a bowl add in the brown sugar, water, soy sauce, vinegar and cornstarch, mix well and pour over chicken continue baking 45 minutes or until chicken is done. The last 5 minutes add in the pineapple chunks and red pepper. Garnish with slices of green onions. Serve with your favorite cooked rice. Easy Peasy!
